Chicken Parmesan

This was easily the most delicious thing i have cooked all week, any self respecting Italian restaurant had chicken Parmesan on its menu, its very easy to make, and seriously if it didn't contain so many calories i would have it for dinner everyday, i am happy to report that i have no leftovers, i ate every SINGLE thing,
Here is the recipe, for my delicious Chicken Parmesan i served it on Whole wheat fettuccine and garnished with fresh Cilantro leaves.



Ingredients (serves 2)
1 chicken breast, skinless, boneless
Marinara sauce
1 tbsp of butter, cubed
3 tbsp of Mozzarella cheese
4 tbsp of freshly grated Parmesan cheese
4 tbsp of panko breadcrumbs
2 tbsp of Olive oil
1 egg
1 tsp of black pepper
1 tbsp of fresh thyme
1 tsp of ground garlic
1 tsp of onion powder
Salt
Chilli

I used homemade marinara sauce for this, its part of why it was so delicious, you can get a jarred one from the grocery store, but i always prefer to make everything at home, i can control the spice and im sure there are no chemicals in it.
I have some marinara stored in my freezer because i seem to cook a lot of Italian so i just make it and store.
It really easy to make. crushed can tomatoes, wine, carrots, celery, onions, ginger, tomato paste, salt, seasoning, bay leaf, boil for a really long time and VOILA!!!!!


Cut chicken breast cross wise about half an inch thick and beat it lightly with a small pestle or the bottom of a bottle * that is what i used X_X* just beat it lightly to flatten to form cutlets, LIGHTLY!!! Dont attack the chicken lol

Okay next, Toast the breadcrumbs in a pan on medium heat, keep stirring so it doesn't burn, add the spices and herbs and stir.
Whisk egg in a bowl, dip the cutlets in the egg and coat with the toasted breadcrumb mixture, then refrigerate cutlets for 30minutes.

Pre heat oven to 500F
In an oven proof pan with 2tbsp of olive oil, brown both sides the cutlets, cooking both sides for 1 minute each, spoon marinara sauce over and between cutlets, sprinkle Mozzarella and Parmesan cheese on top of the cutlets, and also the cubes cubes of butter
Put the pan in the oven for 5minutes until the cheese melts and the cutlets are cooked through.

Serve on Pasta

Do we blend all the ingredients for the marinara sauce
