I have been busy as hell this entire week, havent been able to cook as much and well im really behind on my salad meals, luckily I still have 1 day, and im going to try my best to sneak all the salad dished in, even if i take a day out of next week. lol
Ok so last night i made this chicken salad, it was absolutely divine!!!!!
Paired it with a homemade Goat cheese dressing and well.... NOM NOM NOM!
Here is the recipe (serves 1)
1 skinless, boneless chicken breast.
1/8 cup of Panko breadcrumbs
3 tbsp of grated coconut
1 tbsp of crushed Cornflakes
1 egg, whisked
Olive oil spray
1 carrot, Grated
5 cherry tomatoes, cut in halves
Handful of baby Greens.
Pat chicken dry and spice with salt and black pepper, dip in the egg and coat with a mixture of (grated coconut, breadcrumbs and cornflakes), Preheat oven to 400degF, Put coated Chicken on a baking tray lined with foil and spray lightly with Olive oil. Bake for about 30minutes.
When chicken is cooked, slice horizontally and serve on a bed of mixed Greens, tomatoes and carrot.
