Turkey Stuffed Peppers

I figure when a recipe mainly consist of veggies i can file it under salads, (-_-), sue me

I found this recipe on Gina's blog,here, and i made two changes, replaced cheddar with mozzarella and rice with quinoa, ( which coincidentally is now my favorite grain) Its a grain right? haha, turned out absolutely delicious, you can replace ground turkey with ground beef, pork or ground chicken, and i figure it will still be divine, maybe even tuna.





Recipe( serves 1)
100g of ground turkey meat
1 garlic minced
1/4 of a small onion mined
1/3 tbsp of chopped cilantro
1/2 tsp of cumin powder
Salt
1 Large Red bell pepper
1 cup of homemade turkey stock ( i made this quickly by boil some turkey wings with spices for about 20mins)
1/8 cup of tomato sauce ( i used homemade marinara sauce because i always have that in my fridge handy)
1/2 cup of cooked quinoa
Olive oil spray
1/8 cup of Mozzarella

Preheat oven to 400degF
Saute Onions, Garlic and Cilantro oven medium heat for about 2 minutes and add ground turkey, season with salt, garlic and cumin powder until meat is cooked.
Add Tomato sauce and 1/4 cup of turkey stock and cook on low heat for about 5minutes then Add quinoa.

Cut the Bell pepper in half and remove all seeds, fill it up with the mixture of turkey and rice, Place in a baking dish, and pour the remainder of the stock on the bottom of the baking dish. Cover tightly with foil and bake for 30minute.

Remove foil and take cheese top each pepper with cheese, and return under oven broiler, to melt and brown cheese for about 2 minutes.

Serve with baby greens.
