Crunchy Healthy Goodness

I dont know why im partial to things with a crust, maybe its the illusion of being fried, and that dry crunchy sound it makes in the mouth, whenever i can get make crunchy food with a healthy twist i always JUMP headfirst into it, that's why my oven is my best friend, its the best alternative to frying, i just bake, broil or grill.
Today's Recipe is

Baked Crab Cakes with Chipotle Lime Dipping Sauce.

When i went fishing for a recipe for crabcakes i came across way too many, it just became too confusing, they all used too many things and different sauces, i found some with curry paste, some with slices of bread, in fact searching for a recipe online can be a pain.
Finally decided to modify a couple, add them all together and create my own, LOL, i guess i just added to the confusion.


I got the recipe for the dipping sauce from here, It just made the meal more amazing, the zesty taste of the chipotle in adobo hit the nail on the head. ( i actually had to go to a Latino grocer to find that ingredient, i was determined)

Ingredients for Crab Cakes ( makes 8 crab cakes)
1 pound of lump Crab meat, shell removed
1 cup of crushed Low fat Ritz crackers
1 egg
6 tsp of dijon mustard*
3 tsp of light Mayonnaise
1 and a half tsp of Worcestershire sauce*
Half of a Red Bell pepper, finely diced
3 stalks of scallions ( Spring onions), finely diced
3 tbsp of Tabasco sauce ( i like mine spicy, you can use normal dry pepper)*
1 tbsp of Lemon juice


Whisk egg, mustard, mayo, Tabasco sauce, Worcestershire sauce in a bowl
Add in diced scallions and pepper
Mix in Crushed Ritz Crackers
Fold Crab meat into mixture taking care to leave lumps of crab meat whole.

Use a half cup measuring cup to create patties make sure they are not too thick and place on a lightly greased baking sheet and refrigerate for at least 45mins.

Bake at 450deg F, for 12 minutes on each side or until browned.

Chipotle Lime Dipping Sauce
1 tbsp of chopped Chipotle pepper in adobo sauce
1 tbsp of diced Roasted red peppers (jarred)
1 tbsp Lime juice
1/4 cup of light mayonnaise

Puree all ingredients in a food processor, or magic bullet and serve with crab cakes.

*- ingredients can be omitted
