Grape and Chocolate Chips Mug Cake


With Grape Yogurt Cream

Breakfast has kind of become one of my most staple meals lately, because i tend to work out most mornings early, i try to eat my heaviest meals in the morning, one before i work out and another post workout, hence, i am finding ways to make them more fun and delicious so i wouldnt be stuck on eggs, oatmeal and toast... Saw a picture of a mug cake on Instagram, looked interesting and i decided to try it out, i have done different variations of it, with different fruits sometimes with cacao powder or whey protein and every single time its yummy...

A mug cake is basically a cake baked in a muig, for less than 2 minutes using a microwave, its fast, easy and an absolute guilt free delicious filling meal










Ingredients
40g of plain oats, might be a little less than half cup
1 Tbsp of unsweetened applesauce
1 Tbsp of coconut flour
2 Tbsp of skimmed milk
2 egg whites
1 Tbsp of stevia, (or any sweetener you prefer, sugar or honey)
1 tsp of baking powder
1 tsp of vanilla extract
1 tbsp of sugar free chocolate chips
8 black grapes, chopped

  1. In a food processor or magic bullet blend the oats until they form a powder, it should only take about 2 minutes, doesnt have to be completely fine
  2. Add all the other ingredients except the grapes and chocolate chips,blend them together, til it forms a smooth batter.
  3. Lightly coat a mug with oil or use oil spray
    Add the chocolate chips to the batter then stir with a spoon
    Pour half the batter in the oiled mug and then layer the chopped grapes and cover with the other half of the batter
  4. Put in a microwave for 90 seconds, and top with yogurt cream
    To make the cream blend 2 tbsp of plain nonfat greek yogurt with 4 grapes

    Enjoy

I tried this recipe this morning and it was totally nom. I made a little modification to the recipe which was substituting the grape fruit with a mix of blue and straw berries and for the cream substituted the grape with black berries and honey for sweetener.
Now my cake took about 5mins (if not more) in the microwave..lol...which wasn't surprising to me because i think the power of my microwave is very low compared with most microwaves...(I guess people should note this when baking theirs and just check for wetness will baking). Shared with colleagues at work and they loved it :)
