Continuing with my sojourn into healthier eating, i had been reading a lot on the growing interest with cauliflower on the internet, from cauliflower rice, to cauliflower pizza crust, cauliflower soups and interesting ways to include it in salads.
Now between you and i never liked cauliflower, i always thought of it as the less interesting sister of broccoli, there is something strange about the white color.I decided to put my hesitation aside though and try a cauliflower pizza crust, after all if anything is going to make me like the vegetable, it had to be pizza
Ingredients
1 small to medium sized head of cauliflower - should yield 2 to 3 cups once processed
1/4 teaspoon salt
1 teaspoon of Italian seasoning
1/2 teaspoon garlic powder
1/4 cup shredded Parmesan cheese
1/4 cup mozzarella cheese( i did'nt have so i used tex-mex cheese) still worked :)
1 egg
Chili
optional 1 tablespoon almond flour
- Preheat Oven to 450degF and place a baking sheet in to heat up, a pizza stone would be better but i do not have one if you don't have a pizza stone. Preheat oven to 450 degrees.
Wash and thoroughly dry a small head of cauliflower. Cut the stem off and pulse the florets for about 30 seconds, until you get powdery snow like cauliflower.
- Place the pulsed cauliflower in a microwave safe bowl and cover, microwave for 4 minutes.
Allow cooked cauliflower to cool a bit, then wrap it in a dish towel and squeeze as tight as you can, you want to squeeze until you get as much water as you can out of it, i did this for about 5 minutes, trust me a lot of water comes out, this is very important in getting a firm crust - Add your sauce and toppings and bake for another 5 to 7 minutes until the cheese is melted, bubbly, and slightly golden, i used healthy topping, peppers, shredded chicken breast and low fat cheese.
Allow to slightly cool before cutting through it and enjoy
